Ingredients:

  • 6 slices of chopped thin bacon.
  • 2 cups of white rice.
  • 5 cups of water.
  • 4 eggs, lightly beaten.
  • 3 sliced scallions.
  • 3 tsp. soy sauce.
  • 2 tsp. sesame oil.
  • Hot sauce (optional).

Preparation:

  • Cook the rice. In a saucepan, put water to boil, and then add the rice.
  • Cover, reduce heat, and simmer for 20 minutes. Reserve.
  • In a skillet, cook the bacon over medium heat. When ready, drain the bacon and save for later. Leave the melted bacon fat in the skillet.
  • Add the cooked rice into the skillet and toast it over medium-high heat, stir very well. When the rice is crisped, take it out.
  • Add the beaten eggs to the skillet, stir with a wooden spatula.

Ingredients:

  • 1 cup long-grain white rice.
  • 1 cup of water.
  • 1 can of coconut milk.

  • 2 cups of snow peas,
  • 2 cups of shredded, cooked chicken.
  • 1/2 cup of fresh cilantro leaves.

Preparation:

  • Use a large saucepan to cook the rice. Put the water and the coconut milk and when boiled, add the rice and salt.
  • Bring to a boil over high heat. Reduce the heat to simmer, cover, and cook until the rice is tender. Stir continuously to prevent the rice from sticking onto the saucepan.
  • Cut the snow peas into tiny pieces.
  • When the rice is almost ready, add the snow peas and the chicken.
  • Cook the preparation uncovered until all ingredients are well mixed and warmed.
